Subpanel run from a 200 A main panel

I have a 200 amp service panel that I wish to run a subpanel to my new patio/entertainment room. I as per the AC expert I would need 50 amp to install a new central AC in my patio. and additinal amp for the fans, lights, stereo, tv, and cctv security system, would a 100 amp subpanel be sufficient for this project? and what type of wire should I use to run to subpanel from the main panel? Does the breaker running from the main panel to the subpanel have to be the same? What wire and breaker should I also consider adding for the future installation of central air?
