Painting walls... cutting in different color

I am re-painting my bathroom walls with latex paint. The ceiling and walls sheetrock walls have a medium trowel texture... there is no trim separating the ceiling from the walls. When I tape it off using 3 hour tape, the paint seeps onto the ceiling, which is a different color. The same happens when I use a edge tool. I'm going crazy... when I touch up the ceiling, it seeps back onto the walls. Any ideas? Thank you, Jana
