An excellent resource for roof framing is the book "Roof Framing" by Marshall Gross.

The actual size of the rafters depends on the roof load (shingles, composite, tile, etc.) and spacing of members, as well as other loads, such as snow or wind.

Often, the valley will be "doubled up" 2x material, while the individual rafters are single 2x material. Our roof, which is concrete tile, uses 2x10s @ 16" centers. Be sure to have a structural engineer size your rafters if there is any question.
