Good question, as these are often confused.

A coffered ceiling consists of a "grid" or frame pattern in the ceiling, generally made of wood panels.

A tray ceiling is a regular horizontal (flat) ceiling, except that there is a chamfer around the circumference that angles towards the wall. Since tray ceilings can take advantage of unused space in the roof attic, they are often used to gain another foot or so in ceiling height. Rather than placing ceiling joists directly across the wall top plates, the ceiling joists are mounted a foot or so higher, intersecting the roof rafters. Sometimes, in new homes, pre-fab trusses can be built to accommodate a tray ceiling with minimal additional cost.
